Scrambled Eggs with Spinach & Chives

I'm addicted to this breakfast. It is packed with everything you need to start the day off on the right foot. High in protein, iron and magnesium, all key ingredients in a good well-being diet.


Ingredients:

Teaspoon of coconut oil

2 eggs

2 tablespoons of milk

Handful of chopped baby spinach

Tablespoon of chopped chives

Tablespoon of Love Your Gut powder (optional)

3-4 slices of avocado

Slice of rye bread

Teaspoon of hemp seeds (optional)

Pink Himalayan salt to season


  1. Whisk eggs and milk together and stir in the chives.

  2. Heat frying pan over medium heat and add the coconut oil.

  3. Once the oil is hot add the egg mix and stir to scramble the eggs

  4. As the eggs start to cook , add the chopped baby spinach and gut powder

  5. Season with salt.

  6. Top toasted rye with the avocado slices and spread.

  7. Add the cooked eggs on top and sprinkle with hemp seeds.
